Day 14 – Jambalaya OOOOOOO-heeeeeee

Jambalaya Wednesday!   It turned out really well.    I ate too much.

I hate menu planning.  I just want to be told to make something and I’ll figure it out.  Tonight, I was asked to make jambalaya (recipe to follow).  It turned out amazing with everyone had seconds except the Kid, but that is expected.

  • 1 chicken breast (cubed)
  • 2 Andouille  sausage (sliced)
  • 2 cups of peeled and de-veined (de-pooped) shrimp
  • 1 onion (diced)
  • 1 green pepper (diced)
  • 1 cup of diced celery
  • 3 minced garlic cloves
  • 1 large can of crushed tomatoes
  • 2 cups beef stock
  • 2 cups chicken stock
  • 2 cups of rice
  • (2) 1 tablespoon of cajun seasoning + to taste
    • 2 teaspoons salt
    • 2 teaspoons garlic powder
    • 2 1/2 teaspoons paprika
    • 1 teaspoon ground black pepper
    • 1 teaspoon onion powder
    • 1 teaspoon cayenne pepper
    • 1 1/4 teaspoons dried oregano
    • 1 1/4 teaspoons dried thyme
    • 1 teaspoon turmeric
    • 1/2 teaspoon red pepper flakes
      • blend together in a coffee grinder or food processor until fine powder
  • Season the chicken with 1 tablespoon of the cajun seasoning.  Cook the sausage until it begins to render, add the chicken and cook until both are done. Remove from skillet and set aside and cover with foil.  Reduce the heat and add the garlic, onion, green pepper, and celery and cook until soft.  Bring the heat back up and add the stock and tomatoes and bring to a boil.  Add the rice and cook until almost done. Add the shrimp when you think you have about 5 minutes to go.  Add the sausage and chicken back in when you have about two minutes to go.   Taste and season as you feel appropriate.

I left the seasoning on the table so we could adjust our spice levels to taste.  We almost didn’t have left-overs but we do, I so can’t wait until I see how these flavors blend overnight…
