As mentioned in my earlier post, we were gifted with a huge salmon. It is enough to make 10 steaks, but who can eat that much salmon? Me! Not all at one sitting of course, but definitely over a period of days. Hubby and I have managed to eat 8 of them. Tonight was his original meal with corn pasta in cream sauce revisited, only with Cajun seasoned fish instead of the Asian plum sauce version. Mine was a mixed green salad with fresh tomatoes, balsamic vinegar and olive oil , black pepper and the salmon steak shredded on top. Short and sweet and YUM! Enjoy your dinner! V.
