Day 20 – Chicken pounded flat and stuffed with cheese and ham

If you’re thinking Chicken Cordon Blue, you’d be right.   The ham was a delicious thin pancetta.  The cheese was a baby swiss.  The chicken breasts were cut in half, and flattened.  Essentially it was a ham and cheese sandwich with chicken for bread.   The result was floured, egg washed, coated in bread crumbs and fried (about 5 minutes a side).  The meal was enhanced by oven roasted corn cobs and regular mashed potatoes.   It was delicious and the leftovers will make an excellent sandwich tomorrow! I am cheating with the meal planning.  Z and the roomies got a bunch of index cards and on one side they wrote dishes that they want me to make.  On the other I’ll be writing groceries to make sure we have the stuff in the house when I need to make it.   Tomorrow will be Etouffe.
