I was out most of the day at a charity event so was happy for the leftovers in my fridge. There was one pork steak from last night’s dinner and half an acorn squash. I made a rice side dish for hubby and shared half the acorn squash and the pork steak with him. It sure is nice only cooking for two sometimes. I threw that bad boy in the skillet and warmed it through while the acorn squash got the microwave treatment. Easy peasy. Enjoy your dinner! V.
