Venison stew over potato hash, and minted carrots and parsnips

There is so much food in the fridge right now that we are out of containers, so tonight’s dinner was leftovers. I had venison stew (with a little of the gravy from the beef short ribs) over potato hash, and a side of carrots and parsnips that were dressed with mint, parsley, and lemon.
