Feb 26 – Pork Taco Salad

Hubby is so glad I’m home to start cooking for him again. I did a pork shoulder in the crock pot. Cooked until it was fork tender then shredded it. Made Rao’s favorite pork taco’s with fried shells. For myself I cooked fresh green beans (purchased from a California fruit stand) and some carrots I’d canned last summer. I used the diced lettuce, tomato and onion left after I built hubby’s tacos and made a salad. I threw some shredded pork and refried beans on top of it and had the veggies in a separate bowl. It was pretty delicious. Enjoy your dinner! V.
