March 17- Butternut and Quinoa

We don’t celebrate the Irish food on St. Patrick’s Day. This was a leftover night for dinner. Hubby got the rest of the red beans and rice, and I ate the other half of the butternut squash. I diced up some onion, celery and carrot and mixed it with the quinoa. I put that in the butternut squash half and baked it with some butter on top until it was browned and the vegetables were tender. Enjoy your dinner! V.
