March 18 – Ginger Pork

I had a busy day planned both with my online work and riding my horses, so I put a pork shoulder roast in the slow cooker in the morning with Asian spices, chile flake, ginger and a little soy sauce. After I finished my evening chores it was perfectly cooked and I could shred it with a fork. I cooked some rice for hubby, and ate the last of the cooked quinoa with mine. It was delightful. Enjoy your dinner! V.
