Somewhere in hubby’s shopping travels he purchased a family sized can of refried beans. He opened it on a whim for lunch while I was riding so now I had been tasked with coming up with a dinner that would use them. I decided to take the last of the chicken thighs and shred the meat. I cooked it with onions, celery and peppers and added some hot pepper sauce. I fried corn tortillas until they were crispy and made tostada shells. I smeared with refried beans, topped with cheese, lettuce, onion and diced tomato. Enjoy your dinner! V.
