I’ve been camping all this week with my husband in the most remote campground in Vermont. We’ve been here before, almost ten years ago. This is how we like to camp: eating like kings. Kevin calls it “glamping.” Here’s what we had last night: ribeyes with mushrooms, onions, and peppers, coconut rice, and bok choy. I brought home the leftovers from these huge steaks and will make sandwiches for our dinner tonight.
